Along with oloroso, fino is one of the two main styles of sherry from Jerez, Spain, and is widely considered the world's finest sherry. Fino is a pale, delicate, and bone-dry sherry that typically has a tangy, slightly salty flavor and the aroma of almonds and yeast. Its alcoholic strength ranges from 15.5% to 17%, and is preserved from aging via a naturally-forming yeast called flor. Fino is usually served chilled as an apé́ritif. FYI, fino sherry shouldn't be aged because it won't improve with age and may lose its vitality.
